Green is Cool and Hip and Perfectly WONDERFUL! Hats off to St Patrick's Day or ANY Day!

I love eating green things.. veggies mainly of course, unless you have seen a green cow walking around that gives off some green milk. Have you? No you say? Humm imagine that!

I love inventing and changing recipes to suit me so I am going o list of few of our green vegetable friends first and then lets see what we.. Wait WE? I mean "I" can do with them. My mother in law was watching me make cookies once and noticed I don't really measure all that much. I cook like I paint .. I am an artist... I do it by feeling. With vegetables it is pretty hard to mess up...unlike cookies, which did in fact turn out as they always do.. lol.

This is NOT going to be in alphabetical order, I am just going to list them off the top of my head according through my own personal numminess filter. Well wait.. yes on second thought it will be in alphabetical order but still according to numminess cause I adore veggies and II confess to LOVING the taste of green.

Saint Patrick's Day is gonna be grand!!

btw, one of the zillion reasons to eat green? As we all know it is very healthy!

Care for some delicious pasta?

For all pasta I like to replace regular pasta with quinoa pasta.. much healthier! It tastes no different, you kids will never know. Yup you will probably have to go to a health food store for it.

Cook Time

Prep Time: 10

Total Time: 20

Serves: 4-6

Ingredients

  • 1 pound quinoa pasta
  • 1 cup broccoli florets
  • 1 cup mushrooms sliced
  • 1 cup zucchini sliced
  • 1 cup snow peas
  • 2 tablespoons good quality pesto (or make it yourself)
  • Parmesan cheese
  • 2 -3 tablespoons olive oil or butter

Instructions

  1. Cook pasta until al dente as you stir fry the rest of the ingredients in olive oil (better for you) or butter.. your choice but do use "real" butter. First stir fry the mushrooms and snow peas till ever so slightly limp, remove from heat, then stir fly the rest. Next toss all veggies together with the pesto. Lastly, toss all with the cooked pasta and top with grated Parmesan cheese.

Asparagus and Mushroom Quiche Anyone?

Total Time: 45

Serves: 6-8

Green Asparagus and Mushroom Quiche

  • 1 ready prepared pie crust (or make your own but allow for more time of course)
  • 1 1/2 pound asparagus trimmed and cut in 1/2 inch pieces.
  • 1 med chopped onion
  • 1 garlic clove minced
  • 1/2 cup sliced into small bite size pieces portebella mushrooms
  • 1/4 cup butter
  • 2 "free range" chicken egges lightly beaten
  • 2 cups shredded mozzarella cheese
  • 1/8 cup fresh sliced basil (or 1/4 tsp dry)
  • 2 teaspoons finely chopped fresh oregano (or 1/4 tsp dry)

Instructions

  1. Bake pie crust according to directions. In a large skillet, saute the asparagus, onion and mushrooms in butter until asparagus is crisp-tender. In a large bowl, combine the remaining ingredients; stir in asparagus mixture. Pour into crust. Bake at 375 for 25-30 minutes or until a knife inserted near the edge comes out clean. Let stand for 5 minutes before cutting.

Split Peas Soup... sooo EASY and sooo HEALTHY

Cook Time

Prep Time: 10 min

Total Time: 1- 1 1/2 hour

Serves: 4-6

EASY Split Pea Soup

  • 1/2 onion
  • chopped
  • 4 medium carrots
  • sliced
  • 6 - 10 cups vegetable broth or just plain water Start with 6 and add to as it cooks down
  • 4 diced garlic cloves. (I LOVE garlic
  • add less if you don't)
  • 1 bag split peas (approx 12 oz
  • Optional ham hock or ham bone
  • 2 tbls fresh tarrogon if you have it.. if not then don't let that stop you
  • make it w/o it.

Instructions

  1. Put it all in a pot, bring to a boil and simmer about an hour or so.. could be a tad longer. Stir and check on it occasionally. This is cheap and so darn simple.. and of course good for you. serve with cornbread and salad.

Swiss Char and Garlic.. so simple

Yikes.. "Swiss?" Well think if it a Irish.. lol

Total Time: 15-18 min

Serves: 4

Ingredients

  • 6 Swiss Char leaves shop in 2 inch lengths keeping stems to the side
  • Garlic to taste.. I use about 4 diced but I am a HUGE fan
  • use less is you want.
  • 1 tablespoon and 1 tsp. tablespoon olive oil
  • Lemon juice to taste .. about 2 tsp (optional)
  • Several sprigs
  • loosly chop fresh tarragon leaves
  • toasted pinenuts or some other seed or nut of choice

Instructions

  1. In frying pan saute in 1 tsp olive oil 1/8 cup pine nuts or other nuts of choice stirring constantly till lightly browned, and put to the side. Saute garlic in same pan with 1 tablespoon olive oil till tender. Add stems of char and saute till tender. Add char leaves that have been rinsed in water and are still wet. Toss then cover pan with with lid at med heat for appox 5 min. Top with nuts and serve.
